How to Cook Scottish Black Pudding: 3 Delicious Recipes to Try

We recently teamed up with the fantastic Courtney of @edinburghfoodcourt. She has put 3 simple starter recipes together to inspire you for the festive season. All using our Scottish Black Pudding. You can view her video here.


SPICY BLACK PUDDING BON BONS WITH PEPPERCORN SAUCE


This one is very simple, especially in an air fryer.

Recipe makes about 5 bon bons. Approx prep/cooking time: 15-20 mins.


What you'll need:

  • 220g chubb of Farmers Son Black Pudding

  • 1x tsp chilli flakes

  • 1x tsp chilli powder

  • 1x beaten egg

  • 1/2 cup of breadcrumbs

  • 1x tbsp olive oil for coating

  • Peppercorn sauce


Steps:

  • Take your chubb of black pudding and crumble half of it (110g) into a bowl.

  • Add a teaspoon of chilli flakes and chilli powder

  • Combine it all together which takes a little bit of smooshing.

  • Once all combined simple roll into walnut sized balls, and roll each in a beaten egg and then breadcrumbs (seasoned to your liking)

  • Once all covered in breadcrumbs just spray/brush with a little oil and add to the air fryer for 8 mins at 180°

  • Serve with some peppercorn sauce and that's it!



CAFE ANDALUZ DUPE CHORIZO Y BUTIFARRA NEGRA


What you'll need:

  • 2x slices of The Farmers Son Black Pudding (from our 4 slice pack)

  • 125g chorizo

  • handful of baby potatoes

  • 2x tsp thyme

  • 2x tsp paprika

  • 1x tsp garlic granules

  • 1x tsp onion granules

  • 1x tbsp tomato puree

  • 500ml passata

  • 1x tsp of parsley


Steps:

  • Roughly chop 125g of Chorizo into cubes and add to a cold pan, turning it up to a medium high heat to release the oil and crisp the chorizo up

  • While it is frying, chop some baby potatoes into quarters and pop onto your air fryer with thyme, salt and paprika for 15mins at 180°

  • Once crisp on the outside, add a tablespoon of tomato puree and mix for a few minutes

  • Add 500ml of passata and a teaspoon of thyme, chilli flakes, paprika, garlic granules, onion granules and salt and pepper to taste

  • Next take 2 slices of The Farmers Son black pudding and crumble it into the pan, combining it with the sauce

  • Let that simmer until the potatoes are ready and then add that into the mixture, making sure each piece is covered

  • Serve in a ramekin and sprinkle with parsley


BACON WRAPPED, BLACK PUDDING STUFFED CHICKEN BREAST


This one could absolutely be a main if served with a side.


What you'll need:

  • The Farmers Son Black Pudding chubb (220g)

  • 2x chicken breasts

  • 1x tsp thyme

  • 1x tsp garlic granules

  • black pepper

  • 2x pieces of streaky bacon (we recommend local Puddledub bacon)

  • Whisky/peppercorn sauce


Steps:

  • First combine half of The Farmers Son black pudding chubb (110g) with a teaspoon of thyme, garlic granules and some black pepper

  • Next slice into your 2 chicken breasts lengthwise almost all the way through

  • Put half of the mixture into each breast, pressing it down to ensure it stays in the chicken

  • Wrap with 2 pieces of streaky bacon each and fry for a few minutes on each side to get some colour.

  • Then pop on a tray in the oven for 20mins at 180°

  • Serve with Whisky or Peppercorn Sauce
