Indulge in this simple and enjoyable Scotch Egg recipe featuring our renowned White Pudding crafted with beef dripping.
Prep time: 15 mins. Cooking time: 15 mins. Serves: 2 (double recipe for 4).
Ingredients:
2 slices of The Farmers Son Scottish White Pudding
2 eggs
75g pork sausage, skinned. We recommend Puddledub pork sausages
15 grams plain flour
1 egg, lightly beaten
1/3 cup panko bread crumbs (we used ordinary paxo breadcrumbs but panko is better!)
Cooking spray (we just used a brush and oil)
Method:
Put eggs in boiling water and boil for 7 minutes (for extra runny eggs, only do it for 6 minutes) and put in ice water straight away so egg stops cooking. Take out and peel shell off and put back in ice water so they keep their shape.
Empty sausage meat into a bowl and add in the White Pudding, breaking them into small pieces as you go. Mix well.
Make the Scotch eggs: Divide pork sausage into 2 even portions. Flatten each portion into a thin patty. Carefully place 1 boiled egg in the middle of each patty and wrap sausage around eggs, sealing all sides. Set aside.
Meanwhile, get rest of ingredients ready to dip the Scotch Egg into. Place flour in a small bowl, beaten eggs in another small bowl, and panko on a plate.
Preheat the air fryer to 200 degrees C (we air fried but you can also deep fry).
Dip each sausage-wrapped egg into flour, then dip into beaten egg, letting the excess drip off. Roll in panko and place on a plate.
Spray or brush the air fryer basket with cooking spray. We also brushed the outside of the eggs for extra crispiness. Cook in the preheated air fryer for 12 minutes, turning eggs over halfway through.
