Homemade Scotch Egg with Sausage Meat and Black Pudding by @seasonedscribbles


Ingredients (serves 4)

  • 4 Soft Boiled Egg

  • 300g of The Farmer’s Son Sausage Meat

  • 220g The Farmer’s Son Black Pudding

  • 100g Plain Flour

  • 4 Large Egg (Mixture)

  • 100g Panko Breadcrumbs

  • Smattering of Maldon Salt

  • Sprinkle of Rocket

  • Tsp Mustard


Method


  1. Bring a pan of salted water to the boil and place four eggs into. Simmer for 7min 30 seconds exactly and scoop the eggs out.

  2. Place the eggs in an ice water bowl and leave them to cool completely. Once cooled, peel them and set aside.

  3. Crumble your black pudding and take your sausage meat, put both in a small bowl and mix. Put to the side.

  4. Wrap the soft boiled egg lightly with the flour and egg, then proceed to mix it with the sausage meat and black pudding.

  5. Next, take the eggs and dip them in the panko breadcrumbs and deep fry for 8 minutes.

  6. To cook, add 5cm of oil in a wide saucepan or wok on a medium-high heat. Lower your eggs into the pan and cook for 8 minutes until golden and crispy.

  7. Drain on kitchen paper, leave to cool and serve by adding a smattering of Maldon salt, sprinkle a bit of rocket and dollop of mustard.

  8. Perfect for picnic or brunch dish! Enjoy.
