Packed with iron and zinc, it's no wonder Black Pudding is hailed as a superfood. This Black Pudding hash from @emblogsfood makes for a perfect lazy brunch or a healthy dinner.

Ingredients
1 Sweet potato chopped small 1 White potato chopped small 1 Red onion diced 2 Garlic cloves diced 2 Black Pudding slices chopped into cubes Handful of tomatoes 1 Tbs Olive oil 1 Tbs Paprika 1 Tbs Mixed Herbs 1 Tbs Red Chilli Flakes 2 Eggs Salt & Pepper
Method
1. Boil the potatoes in water for around 10-12 minutes. 2. In a separate pan - fry the onions, garlic and tomatoes in olive oil on low heat. 3. Add the black pudding and fry for an extra few minutes. 4. Drain water from potatoes and squish slightly with a fork then add paprika and herbs.
5. Add to the pan with the rest of the ingredients and add salt and pepper to taste.
6. Plate up and fry an egg to put on top, sprinkle red chilli flakes over and enjoy!
