Black Pudding and Salsa Wrap

Looking for some lunchtime inspiration or a quick on the go snack? Try out our black pudding and salsa wrap, bursting full of flavour. We love the combination of black pudding and avocado here, delicious.

A black pudding and salsa wrap which are perfect for lunch or a quick on the go snack.


Ingredients

1 large avocado

2 spring onions

1 mango

1 red or green chilli

juice of 1/2 lime

1 bag mixed leaves

1 pack of 8 wraps (or a gluten free alternative)

800g Farmer's Son Black Pudding, sliced into 8 pieces


Method

To make the salsa: chop the avocado and mango into approx. 1cm cubes, finely slice the spring onions and finely dice the chilli.

Cook the black pudding: Heat the grill to high and grill the black pudding for a few minutes on each side. Once cooked, remove the skin and dice into 1cm cubes.

Wrap time! Take a wrap, sprinkle on a handful of leaves, top with a good layer of salsa and black pudding. Roll up and enjoy!
